Recipe; Tasty Rice And Chicken Stew

Ghana Chicken Stew with rice.
Ingredients
1 whole layer or stewing chicken chopped
3-5 large tomatoes or 1 can of tomatoes
1/2 teaspoon smoked paprika
1/2 teaspoon ground cayenne
1/2 teaspoon coriander seeds (optional)
1/2 teaspoon ground caraway (optional)
Peppers according to taste (can use green peppers, scotch bonnet or kpakpo shito)

Green, yellow and red bell peppers (optional)
2 large onions
1 teaspoon of tomatoes puree
2 cloves of garlic
Salt to taste
A cup or two of vegetable oil
Rice and Plantain
Method
1. Wash the chicken well and add spices such as garlic, cayenne powder, ground caraway etc to marinate

2. Leave to stand for 5 minutes and then boil for about 30 minutes (if using layer or stewing chicken) in a little water to prevent it from sticking to the pot

3. Cut the onions and add half to a mixture of the tomatoes and peppers to blend

4. Put the coriander seeds in the pan on medium to high heat until they start crackling and releasing their flavour

5. Add cooking oil in the pan and add the chopped onions after about 4-5 minutes when oil becomes hot

6. Add the the boiled chicken pieces (save the chicken stock for later) to fry for about 5 minutes, turning constantly until the chicken is brown

7. Add chopped onions and red, green and yellow bell peppers to the frying chicken and after about two minutes pour in blended tomatoes, onions and peppers

8. Add chicken stock and cook for 20-30 minutes and simmer on low heat in the last 5-10 minutes and leave to stand.

9. Fry plantain and Cook rice as side dishes to serve with chicken stew
